Butternut Squash & Red Lentil Soup
  1. In a large soup pot, heat the oil on low heat
  2. Add the crushed garlic, basil and ground spices Stir over low heat until the spices are fragrant
  3. Add the chopped butternut squash and stir around to coat in spices and oil Cook 10-15 minutes over a medium heat.
  4. Add the lentils and stir for another 5 minutes.
  5. Add the water (enough to cover generously,) turn the heat down to low and simmer for 30-45 minutes.
  6. When squash is soft and lentils have collapsed, remove from heat and allow to cool. Process until smooth in a blender
  7. To serve: heat over a low heat and serve with kefir or yoghurt. Add cracked pepper, chili flakes or fresh herbs as desired.
