Creative and fun way of serving your fruit salad. Dig out the inside of a cantaloupe and it becomes a bowl to serve your delicious fresh and healthy cantaloupe fruit salad with creamy vanilla greek yoghurt. Fresh and healthy dessert idea great for summer entertaining

Method:
Cantaloupe Fruit Salad with Vanilla Greek Yoghurt
  1. Make an incision in the middle of the vanilla pod. Add into a small sauce pan with sugar and water and bring to a boil. Reduce heat to simmer for 20 minutes until the liquid turns syrupy. Remove from heat and set aside to cool and remove the vanilla pod
  2. Remove the seeds from the cantaloupe and save one of the halves. Cut the skin off the other half and cut into bite sizes
  3. In a mixing bowl, add in the rockmelon, kiwifruit, grapefruit and strawberries. Tear the mint leaves into the salad and drizzle with 2 tablespoons of the vanilla syrup. Mix together and transfer to a serving bowl
  4. Mix a quarter cup of vanilla syrup with the yoghurt to serve. Store excess syrup in the fridge (for up to 2 weeks)
