This caramelised onion and pear tart is a great idea for dinner parties when you're hosting vegetarian guests. Full of flavour in every bite, this sweet and savoury dish is a must try.

Caramelized Onion and Pear Tart
  1. Preheat oven to 200°C
  2. Heat the oil in a large non-stick frying pan over medium heat
  3. Add the onions and cook, stirring, for 15 minutes or until softened and light golden
  4. Add the sugar, thyme, balsamic, salt and pepper and cook, stirring, for a further 5 minutes or until caramelized
  5. Place the pastry on a baking tray lined with non-stick baking paper, top with the onion and goat's cheese and fold up the sides of the pastry to enclose
  6. Bake for 20 - 25 minutes or until golden
  7. Top with rocket and pear and drizzle with extra oil and vinegar to serve
