French Toast Recipe: Coconut brioche

Method:
French Toast
- Beat eggs and milk together with a fork and put in a shallow bowl
- Dip each side of the bread in the egg mixture until well coated
- Preheat Naked Pan cast iron pan on medium heat and add butter
- Add bread to pan when butter is bubbling
- Cook until bottom is golden brown (2 - 3 mins) and flip over
- Cook second side until brown and transfer to plate
- Serve with glazed strawberries and maple syrup
Glazed Strawberries
- Cut strawberries in half lengthways leaving green stems on
- Preheat a Naked Pan on low to medium heat
- Oil lightly with a neutral oil and a paper towl
- Dip cut side of strawberries into caster sugar
- Place strawberries cut side down onto pan
- Increase heat and cook until the sugar caramelises
- When the sugar caramelizes turn off the heat, flip strawberries over in pan and immediately remove them from the pan
- Set aside for French toast
Tips & Hints:
- You can buy coconut brioche at many Asian bakeries eg Breadtop, If you can't find coconut brioche, replace with a plain brioche or white bread.
