Ham and Cherry Tomato Tart
Ingredients:
1 1/2 sheets shortcrust pastry
100g Don Double Smoked Ham, roughly chopped
8-10 cherry tomatoes, halved
1/2 cup frozen or fresh peas
3 eggs
1/4 cup thickened cream
Pepper to taste
2 spring onions, chopped
Method:
Line a shallow 36cm x 12cm tart pan with the pastry. Trim off excess edges
Place the ham, halved cherry tomatoes and peas in the base of the tart
Lightly whisk the eggs, cream and seasoning together and pour over ingredients in tart base. Top with the spring onions
Bake in a pre-heated 180°C oven for 20 minutes or until golden
Serve with a fresh green salad
