Mini Vegetarian Quiches
Ingredients:
Method:
- Pre-heat oven to 180°C on fan forced cooking function. Grease 2 x 12 round-bottomed patty tins
- Using a 5-6cm fluted cutter, cut out pastry rounds and press into each mould. Chill in the fridge for a few minutes
- Whisk eggs with cream and add salt and pepper
- Combine parsley, semi dried tomatoes and cheese and sprinkle evenly over each base of pastry
- Carefully pour cream mix into each pastry
- Cook for 15 minutes or until golden
- Cool on wire rack
