Panettone Pudding
Ingredients:
Syrup
Method:
- Preheat oven to 150°C on fan forced cooking function
- Lightly grease a 2 litre capacity oven proof dish
- Butter sides of the panettone with remaining butter and place in dish
- In a large bowl whisk together cream, milk, eggs, sugar, zest and vanilla bean seeds. Pour over panettone and allow to soak for 15-20 minutes
- Sprinkle with almonds
- Place dish in a large roasting pan. Add enough hot water to come halfway up the sides of the baking dish
- Cover with baking paper and foil
- Bake for 55-60 minutes or until custard is set
Syrup
- In a small saucepan on medium-low heat, stir all ingredients until sugar is dissolved.
- Increase heat and bring to the boil. Boil 2-3 minutes without stirring, until syrupy. Brush over hot pudding
- Serve hot or warm
