Steamed Ginger Nut and Lime Cheesecake Pots

- For best results use a Blanco Steam Oven for this recipe
- Grease 6 ramekins or ovenproof coffee cups. Place a biscuit in the base of each
- Combine the cream, cream cheese, eggs, sugar, lime zest and juice in a food processor and blend until smooth. Pour the mixture over the biscuits slowly
- Place in perforated steamer tray, cover with baking paper first then foil. Cook for 50 minutes or until just firm
- Remove cheesecakes from steamer and let cool to room temperature before serving
