Satay Chicken
Ingredients:
Method:
  1. Heat oil in a wok. Add ½ chicken and cook on high until sealed then set aside
  2. Add second portion of chicken, and cook until sealed, then add vegetables and stir-fry for 2-3 minutes
  3. Add first batch of cooked chicken, pour in satay sauce and stir fry for 3-5 minutes, or until meat is fully cooked
  4. Serve immediately on a bed of steamed Jasmine rice
  5. Top with crushed peanuts and herbs if using

If I can cook this, anyone can. Use thin strips of chicken tenderloins (not chicken breast). Satay sauce is sweet and spicy, and is one of the better satay sauce’s I’ve tried. Really enjoyed this.
