To make sweet onions, heat oil in a medium frying pan over medium heat. Add onions and cook, stirring occasionally, for 12-15 minutes or until soft and golden. Stir in red currant jelly and vinegar. Cook for 2 minutes. Set aside and keep warm
Spray steaks with oil and season with salt and pepper. Heat a char-grill (or use a non-stick frying pan) over medium-high heat. Char-grill steaks for 2-3 minutes on each side or until cooked to your liking. Transfer to a plate, cover and set aside to rest
Meanwhile, char-grill tomatoes for 30 seconds on each side. Transfer to a plate. Spray bread with oil and char-grill until golden
Spread char-grilled bread with aioli or mayonnaise. Top with rocket or lettuce, steaks, tomatoes and sweet onions and serve
