How to store and freeze béchamel or white sauce

Béchamel can be stored in an airtight container in the fridge for up to one week. 
Can you freeze béchamel sauce?
Yes, this is how to freeze béchamel:
 
  • Portion béchamel sauce in zip lock bags (reusable silicon bags are more sustainable).
  • Label and date clearly and lay flat to freeze.
  • To defrost béchamel sauce, place in the fridge overnight. The thawed sauce will look watery and split.
  • Whisk over low heat in a saucepan to return to its original consistency.
  • Use immediately.
