Prepare the asparagus by snapping or cutting off the tough lower ends
Bring a large pan of water to the boil and blanch the asparagus for 2 minutes, remove and drizzle lightly with olive oil and season to taste with salt and pepper
Place egg into a saucepan, cover with water and bring to the boil over high heat. Reduce heat to medium and simmer for 4 minutes for soft boiled eggs or 6 minutes for hard boiled
To serve, place egg into an egg cup, cut off top. Serve with warm asparagus
