Tips & Hints:
- Turkey Tips - Remember to order the turkey fillet from your local poultry specialist. The breast fillets are readily available at Christmas time, but not always from the supermarket. A great substitute would be to use 2 large chicken breast fillets together. Allow large joints of meat and poultry sufficient time to thaw prior to Christmas Day. It can take some larger pieces up to 72 hours to thaw properly. This must always be done in the fridge, never on the kitchen bench at room temperature. The microwave oven is also suitable
