Peanut Butter Satay Chicken Burgers
Ingredients:
Method:
  1. COMBINE the mince in a large bowl with the next 6 ingredients and mix well. Divide mixture into 6 portions and form into burgers. Refrigerate for 30 minutes
  2. COOK the burgers on a lightly oiled BBQ or chargrill plate until cooked through. Rest for 1-2 minutes
  3. ASSEMBLE the rolls with lettuce, cucumber, carrot and burgers, then finish with a drizzle of sweet chilli sauce and coriander leaves. Serve immediately
Tips & Hints:
  • Burger can be shaped and refrigerated up to 2 hours before cooking or frozen uncooked for up to 1 month. When entertaining, make mini satay 'sliders' and serve in mini bread rolls. Use a vegetable peeler to cut cucumber ribbons.

So easy to prepare and the 30 mins needed in the fridge gives you time to get everything else together to make up the burgers. Pan fry or BBQ. . . this is a delicious recipe, well worth a try.
