Lychee Mojito

Method:
Lychee Mojito
- Add equal amounts of water and sugar to a saucepan and bring it to the boil
- Once it's bubbling, add a handful of chopped ginger and take the pot off the heat, allowing it to cool
- Strain the ginger from the liquid, and, voila, you've made ginger syrup
- The rest of the Lychee Mojito process is easy:Take an ice-filled cocktail shaker and gently muddle some tinned lychees, lime and mint
- Throw in a shot of good-quality white rum and a dash of gin
- Pour over a small amount of lychee juice you've reserved from the can
- Finally, add some of your ginger syrup, and give the tin a shake
- Strain the contents of the shaker into a tall glass filled with crushed ice and top up with Schweppes Soda Water
Tips & Hints:
- Garnish with mint and a little lychee. Serve in a tall Glass
