Carolina BBQ Pork Burnt Ends are smoky, sticky and packed with tangy flavour. Pork belly is cooked hot to form a crust, then braised in Carolina-style sauce until melt-in-your-mouth tender.

Method:
  1. Set your BBQ to high.
  2. In a bowl add Smokin South Carolina seasoning to the Pork Belly until fully coated.
  3. Place the pork pieces onto a cooling wire or BBQ wire rack and place onto the BBQ and cook for 35 minutes turning the pork frequently until a crust has formed.
  4. Place the pork into a roasting tray. Add a little more Carolina seasoning, butter, water, vinegar and BBQ sauce. Cover with a lid or greaseproof paper and foil and return to the bbq and cook for a further 1 hour shaking frequently.
  5. Once a skewer can be inserted through the pork like butter it is ready to serve!
