Carolina Pork Quesadillas are stacked with juicy pork, melty cheese and jalapeños, finished with tangy Carolina-style heat. Easy to cook, easy to flip and seriously hard to stop eating.

Hot & Cheesy Carolina Pork Quesadillas

Method:
  1. In a hot pan, sauté garlic and onion until soft and fragrant.
  2. Add pork mince, breaking it up and browning well.
  3. Stir in diced tomatoes and capsicum. Season with SmokinSouth Carolina and a splash of stock. Simmer for 5–8 mins until the mix is thick and rich. Remove from heat.
  4. On one tortilla, layer pork mixture, cheese, jalapeños, and a squeeze of lime. Top with a second tortilla and press gently.
  5. Cook in a dry pan or sandwich press — crisp one side, flip, and repeat until golden. Slice into wedges and serve hot.
