This creamy one-pan chicken casserole is sure to please the family. Full of bacon, mushrooms and tomatoes, this dinner is delicious served with mash.

Creamy One-pan Chicken, Bacon and Tomato Casserole
Ingredients:
Method:
  1. Heat oil in a large heavy-based frying pan over medium-high heat. Add bacon and cook, stirring, for 2-3 minutes until softening. Add mushrooms and cook, stirring, for 2 minutes
  2. Stir in tomatoes and stock. Cover and bring to the boil over medium-high heat. Add chicken and thyme. Reduce heat, cover and simmer, stirring occasionally, for 15-20 minutes until chicken is cooked through. Season to taste. Stir through cream and spinach. Serve with cauliflower rice or creamy potato mash

Making it again now. I am using the regular Ardmona tomatoes because I cannot find the ones mentioned so I am also adding a lot of the Gourmet Garden garlic

I couldn’t find the Ardmona tomatoes mentioned so just used the regular thick ones and added extra half onion. A Fantastic recipe! Thank you.

Found this recipe while checking out your Facebook page. Didn't have the tinted tomatoes or mushrooms so used a tin of condensed tomato soup and chopped up some fresh tomato & capsicum. Couldn't be bothered with peeling & making potato so cooked up some gluten free fettuccine. Totally easy & delicious quick meal!
