Air Fryer Banana Bread Muffins
  1. Combine 1 cup mashed banana, butter, eggs, vanilla and sugar in a large bowl with a whisk. Sift flour and cinnamon over the top and stir with whisk until smooth.
  2. Place enough paper muffin cases in air fryer basket that can fit, 1cm apart. (see tip) Spoon mixture evenly into paper cases until ¾ full. Air fry on 160C for 12-15 minutes or until cooked through when pierced with a skewer.
  3. Remove pan and basket and allow to cool for a few minutes before carefully lifting out of basket and placing on a wire rack to cool. Cook remaining muffins the same way. Dust with icing sugar to serve. Serve with Western Star Spreadable.
Tips & Hints:
  • You will need one cup of mashed banana
  • To make in the oven; line a standard muffin pan with 10 paper muffin cases. Spoon mixture evenly into cases and cook in a 170C preheated oven for 20-25 minutes until golden.
  • For stability in the air fryer we used paper cases that had a foil outer casing. Available in supermarkets.
