Dairy-free Banana Bread

Method:
- Preheat oven to 170ºC/150ºC fan-forced. Grease a 23cm x 12cm loaf pan with cooking spray and set aside.
- Place almond meal, cinnamon, bi carbonate soda and salt in a medium mixing bowl and mix well.
- In a separate large bowl, beat eggs, coconut oil, Monkfruit Golden Sweetener and vanilla together until well combined. Stir in the mashed banana and mix well.
- Fold through almond meal mixture and chopped walnuts until evenly combined throughout the mixture.
- Pour mixture into prepared loaf pan. Sprinkle the top with a little more cinnamon and arrange sliced banana over the top. Bake for 50-55 minutes or until a skewer inserted comes out clean.
- Stand in tin for 10 minutes. Transfer to a wire cake rack to cool.
- Slice into 8 thick slices and serve warm
