This easy sausage curry can be made in a flash on the stove or in a slow cooker. The mild curry sauce blended with creamy coconut milk and traditional spices make a dinner that's suitable for the whole family.

Ingredients:
Method:
  1. STOVE TOP METHOD: Heat a large deep-frying pan over medium heat. Add sausages and cook 5 minutes or until just browned. Transfer to a plate and cut into 3-4 cm pieces. Add onion and cook for 3 minutes or until softened
  2. Stir in carrots and celery and cook for a further 3-4 minutes
  3. Add Mild Mince Curry Simmer Sauce and ⅓ cup water and bring to a simmer. Return sausage to pan along with apple and sultanas. Cover and cook 10-15 minutes or until vegetables are cooked through. Stir through coconut milk
  4. Serve topped with parsley and serve with steamed rice
  5. SLOW COOKER METHOD: Heat oil in a large frying pan over medium heat. Add sausages and cooked 5 minutes or until just browned. Transfer to a plate and cut into 5cm pieces. Place into slow cooker
  6. Add onions, carrot, celery, apple, sultanas and Mild Mince Curry Simmer Sauce. Cover and cook HIGH 2 hours (LOW 3-4 hours)
  7. In the last ½ hour of cooking, add coconut milk
  8. Serve topped with chopped parsley and steamed rice
Tips & Hints:
  • Pour off excess fat from pan after cooking sausages, reserving a tablespoon for cooking the onion.

I can't recommend this sauce and the brand highly enough. This recipe is simply delicious. My kids love it, it tastes great and I look forward to making it which is pretty strange but true. Thank you for the great recipes.
