Mozzarella & Pancetta Pizza
  1. Pre-heat oven to 200°C. Heat oil in a small frying pan over medium heat. Add spring onions and garlic, cook for 1-2 minutes until softened. Stir in tomatoes, vinegar and seasonings
  2. Bring to the boil, reduce heat and simmer gently for 3-4 minutes or until thickened. Allow to cool slightly
  3. Spread tomato mixture between pizza bases and top with bocconcini and pancetta
  4. Drizzle with a little extra olive oil and cook for 10-12 minutes until bases are crisp and cheese has melted. Serve pizza sprinkled with basil
