This easy oven baked almond crusted barramundi served with vegetables is a lovely and fresh dinner or lunch idea. This high-protein meal is full of fibre, healthy fats and vegetables.

Barramundi
  1. Pre-heat Oven 170°C
  2. Place De Costi Barramundi fillets skin side down on baking paper
  3. Brush each fillet with olive oil, a squeeze of lemon juice and season with pepper
  4. Top each fillet with the flaked almonds and press firmly
  5. Bake the Barramundi fillets for 10 - 12 mins until almonds are golden and fish flakes easily
To Serve
  1. Serve Barramundi with steamed potatoes, beans and carrots. Garnish with lemon zest and parsley
