Method:
Roast Chicken with VEGEMITE and Walnut Pesto
- COMBINE in a food processor the walnuts, Parmesan, parsley, VEGEMITE and garlic, pulse until combined. Add the oil and process until just combined
- PLACE the pesto in a large bowl, add the chicken and potato and toss to coat. Transfer to a paper lined baking tray. Season with salt and pepper
- BAKE in moderate oven 180°C for 40 minutes. Increase the heat to 200°C; sprinkle the breadcrumbs over the chicken and potatoes and bake for a further 7-10 minutes or until the chicken is cooked and the breadcrumbs are golden
- PLACE the chicken and potatoes onto serving plates with a rocket salad. Serve immediately
