Tandoori Roasted Cup Mushrooms
  1. Preheat oven to 250°C or 230°C fan forced. Combine yoghurt, tandoori paste and cumin in a large bowl. Add mushrooms and stir to coat
  2. Place mushrooms onto a well-greased baking tray. Roast for 10-12 minutes until lightly charred and tender
  3. Top with coriander leaves and serve with yoghurt, naan bread and lemon wedges

  • Serves 4 as a light meal

Not really a fan. The mushrooms need more than the stated time to really roast. The combination becomes very one note even with a side of pita. If you decide to do this don't skip or skimp on the lemon, it really needs that bit of acidity.

I loved this recipe!! I is very easy to make and was enjoyed by all my friends. It has so much taste and flavour to it that it goes well with any curry dish.
