Spinach and White Bean Dip

Method:
- HEAT oil in a heavy based saucepan, add onion, garlic and fennel and cook for 5-6 minutes until onion has softened
- ADD the beans and spinach and cook a further 2-3 minutes. Remove from heat and allow to cool slightly
- PROCESS the bean mixture, PHILLY, lemon juice and seasonings until smooth.
- Spoon the dip into a serving bowl, drizzle with extra oil and serve with blanched vegetables and lavosh
