Baked Lime Cheesecake (sugar-free)

Base
  1. Add coconut, cashews and oats into processor, lightly blitz.
  2. Add Lakanto Bakers Syrup, almond butter, vanilla bean essence and salt and blitz on high until crumbly consistency forms. Be careful not to over process.
  3. Combine with melted butter.
  4. Press into bottom and partially up sides of 9 inch springform pan. Refrigerate.
Filling
  1. In a large bowl, beat the cream cheese with an electric mixer. Add the Bakers Classic Syrup, grated lime, and cornflour until smooth and fluffy.
  2. Beat in eggs one at a time, blending just until smooth. Add lime juice with the mixer on low. Finish mixing by hand. Do not over beat the mix. Pour batter into the prepared crust.
  3. Bake at 150C for 55 - 65 minutes or until set. To minimise cracking, place a shallow pan half full of hot water on the lower rack during baking.
  4. Turn oven off, and let the cheesecake stand in the oven for 30 minutes with the door open at least 4 inches (use a wooden spoon to hold the door open if necessary). Remove from oven.
  5. Refrigerate the cheesecake overnight and for up to three days. Top with light whipped cream to serve.
