Whether you want to try these baked potatoes with cheesy chicken coleslaw as a starter, side or a snack, they're perfect. Topped with a dollop of sour cream, this easy recipe is a very appetising dish.

Baked Potatoes with Cheesy Chicken Coleslaw
Ingredients:
Method:
  1. Preheat oven to 200°C (180°C fan forced). Pierce skin of potatoes in several different places using a fork
  2. Place potatoes on baking tray and bake for about 1 hour or until a skewer goes all the way through without any resistance
  3. Remove from oven and carefully cut a 5cm deep cross into the top of each potato. Press sides to open up the cross to hold filling
  4. In a large bowl, combine carrot, cabbage, chicken, cheese, spring onions, olive oil, lemon juice and season to taste
  5. Place the potatoes on serving plates and top with cheesy chicken coleslaw. Serve topped with sour cream and chives
Tips & Hints:
  • Try using sweet potato instead of regular potatoes for something a little different! Potatoes can be pierced and microwaved, for 10 minutes, before baking to speed up the cooking process.
