Barbecue Mushroom Egg
Ingredients:
Method:
- Clean mushrooms and carefully remove the stalk from the centre
- Drizzle olive oil over mushrooms and season with salt and pepper. Place onto a preheated hot barbecue plate and cook for 2 minutes.
- Crack eggs into the mushroom cups, close the lid of the barbecue and cook for 2 - 3 minutes or until eggs are cooked to your liking
- Season to taste and top with chopped chives. Serve immediately
Tips & Hints:
- If your barbecue does not have a lid, cover the mushrooms with an upside down oven dish or aluminium foil roasting tray
