These grilled mushrooms stuffed with eggs are a low-carb recipe idea that's ideal for breakfast or lunch.

Barbecue Mushroom Egg
  1. Clean mushrooms and carefully remove the stalk from the centre
  2. Drizzle olive oil over mushrooms and season with salt and pepper. Place onto a preheated hot barbecue plate and cook for 2 minutes.
  3. Crack eggs into the mushroom cups, close the lid of the barbecue and cook for 2 - 3 minutes or until eggs are cooked to your liking
  4. Season to taste and top with chopped chives. Serve immediately
Tips & Hints:
  • If your barbecue does not have a lid, cover the mushrooms with an upside down oven dish or aluminium foil roasting tray
