Method:
Cajun Fried Chicken with Charred Corn & Tomato Salsa
- Combine the chicken, oil and Cajun seasoning in a large bowl and toss to coat chicken. Arrange the chicken in a single layer on a paper lined baking tray and bake in a moderate oven 180°C for 30-35 minutes or until cooked through. Keep warm
- Spray the corn with oil spray and season to taste. Cook on a heated char grill pan or BBQ until lightly charred. Remove and cool for 10 minutes before slicing kernels off the cob
- Combine the tomatoes, onion, coriander, almonds and corn in a serving bowl
- Serve the chicken with corn and tomato salsa, drizzled with dressing. Serve immediately
Tips & Hints:
- Substitute fish fillets such as flathead fillets for the chicken if desired. Cajun seasoning mix is available in the herbs and spices section of the supermarket.
