  1. Place milk, dairy spread, flour and nutmeg (if using) into a cold saucepan all at the same time, then bring to the boil over medium heat whisking constantly until thick, smooth and glossy
  2. Stir in cheese until melted. Remove from heat and set aside
  1. Cook the pasta in a medium saucepan of boiling salted water until al dente (approx. 12-15 minutes). Drain well, reserving 1/4 cup of cooking water and return pasta to saucepan
  2. Add reserved pasta water, chicken, capsicum, olives and basil into pasta and stir until heated through. Pour bechamel sauce over pasta and serve with extra basil and season to taste
Tips & Hints:
  • Sliced salami, cooked chorizo or ham would make a great alternative to chicken in this pasta dish. Add any grilled or blanched vegetables that you like, try peas, asparagus, grilled eggplant or zucchini.
