Easy one pan chicken tray bake for quick family dinners. Add an avocado salad to this easy weeknight dinner recipe.

Chicken, Avocado and Crunchy Potato Tray Bake
Ingredients:
Method:
  1. Preheat oven to 220C fan forced
  2. Put the chicken, oil, garlic, salt, pepper, lemon juice and oregano in a large bowl and mix to combine. Set aside to marinate
  3. Place the potatoes on a large oven tray and cook in oven for 15 minutes or until golden brown. Top with the marinated chicken, marinade and lemon slices. Cook for 28-30 minutes or until golden brown and cooked through
  4. To serve, top with beans, avocado and spinach. Crumble with fetta and drizzle with oil
Tips & Hints:
  • You can break a whole chicken down yourself or ask your butcher to cut it for you

Wow this is a gorgeous recipe. Absolutely delicious and full of flavour. Used diced chicken breast. Did add some cherry tomatoes rather than spinach an£ beans, gorgeous. Definitely a recipe to do again.
