A great alternative to the classic beef ragu recipe, try this chorizo and vegetable version.

Chorizo and Veg Ragout with Parpardelle Pasta
  1. Cook pasta as per packet instructions
  2. Whilst the pasta is cooking, heat oil in a large, heavy based pan on medium heat
  3. Add garlic, onion and chorizo. Saute until onion is translucent
  4. Add pasta sauce, vegetables and thyme and cook for a further 5 minutes or until vegetables are tender
  5. Remove from heat and add parsley, seasoning and pasta and gently toss to combine
  6. Sprinkle with extra chopped parsley to serve
