Method:
Easy Cheese Bechamel Sauce
  1. Place milk, dairy spread, flour and nutmeg (if using) into a cold saucepan all at the same time, then bring to the boil over medium heat whisking constantly until thick, smooth and glossy
  2. Stir in cheese until melted. Remove from heat and use as required
Cauliflower Cheese
  1. Steam or microwave cauliflower for 3-5 minutes until just tender, season to taste. Place in a single layer in a serving dish and keep warm
  2. Pour béchamel sauce over cauliflower. Scatter with hazelnuts, thyme, parsley and lemon zest. Serve immediately
Tips & Hints:
  • The hazelnuts can be substituted with fresh or panko or dried breadcrumbs and cooked in the oven for 15 minutes or until breadcrumbs are golden.
