Egg Bruschetta with Salmon Roe and Dill
Ingredients:
4 tbsp light mayonnaise
1 tsp grain mustard
2 tsp chopped dill, plus extra sprigs for garnish
Salt and pepper
8 hard boiled eggs
4-8 slices grilled and toasted bruschetta bread
4 tsp salmon roe
Method:
In a bowl mix mayonnaise, mustard, dill and season to taste with salt and pepper
Add eggs, lightly smash with a fork and mix through the mayonnaise mixture
Spoon onto the toasted bread and garnish with salmon roe and extra dill sprigs. Serve immediately
Tips & Hints:
Hard-boiled eggs are easiest to peel right after cooling. Cooling causes the egg to contract slightly in the shell
