Chilli Scrambled Eggs
Ingredients:
Method:
  1. Whisk eggs and milk until combined.
  2. Melt butter in a medium, non-stick frying pan over a medium heat. Add chilli and stir for 10 seconds.
  3. Add egg mixture to pan. Cook for 10 seconds before using a heatproof spatula to continually and gently drag the mixture from the outside to the centre of pan. Cook for 1-2 minutes or until eggs are almost set.
  4. Crumble goats cheese over the top. Remove from the heat as eggs will continue to cook.
  5. Slide onto plate with ciabatta. Top with chilli jam and snow pea sprouts and serve.
Tips & Hints:
  • Swap ciabatta for sourdough rye to boost the fibre and butter for olive oil to make this recipe heart healthy.
