Place the pears, cinnamon, lemon juice, vanilla and sugar in a saucepan over a medium heat. Cook the pears, stirring regularly, for 10 minutes or until the pears soften. Carefully remove the pears from the heat, add the blueberries, and then stir to combine
To make the crumble topping, place the flour and brown sugar in a bowl. Add the butter, and use your fingers (or get the kids involved!) to rub the ingredients together until the mixture looks like breadcrumbs. Mix in the oats and coconut with your hands until combined
Carefully spoon the pear mixture into 6 ovenproof bowls or ramekins, and sprinkle the crumble mixture over each. Bake for 15-20 minutes or until the topping is golden
Serve straight away with a spoonful of vanilla yoghurt or, as a treat, try vanilla ice cream!
