Passionfruit and Apricot Ice Cream
  1. COOK apricots, sugar and water in a saucepan over moderate heat. stirring until sugar has dissolved. Cook mixture, stirring occasionally, for 5 minutes or until apricots are softened. Puree then cover and chill
  2. IN a blender, process PHILLY and milk until smooth. Stir in cream, passionfruit, and apricot mixture, mix well but do not blend
  3. FREEZE mixture in an ice cream maker according to the manufacturer's directions
  4. USE as required
