Red Cabbage Slaw with Soft-Boiled Egg on a Baguette
  1. Place cabbage, apple, walnuts into a bowl and mix through with yoghurt and lemon juice (ingredient proportions based on taste). Season to taste with salt and pepper
  2. Spread baguette with Tablelands Smart Spread. Top with coleslaw, chives and egg
Tips & Hints:
  • The yoghurt dressing can be replaced with store brought coleslaw dressing. Red cabbage can be replaced with white.
