Smoked Salmon and Rocket Pasta
  1. Cook pasta in a large saucepan of boiling water until al dente. Drain and set aside
  2. Combine cornflour with a little Vitasoy Soy Milky Lite to form a paste. Add remaining Vitasoy Soy Milky and mix to combine well
  3. Heat oil in a frying pan over medium heat and add crushed garlic and sliced green onion. Cook for 1 minute. Add Vitasoy Soy Milky Lite and gently simmer for 5 minutes. Add rocket (or spinach) and smoked salmon and mix well. Stir through cooked pasta gently. Spoon into serving bowls and garnish with shaved parmesan (or dairy free) cheese, if desired
