Spiced Cake with Lemon Cream Cheese Frosting
Ingredients
Method
Ingredients:
Cake
1 pack Green's Golden Butter Cake Mix
2 eggs
2/3 cup (150ml) milk
3 tablespoon margarine or butter, softened
1 teaspoon cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ginger
20cm x 7cm round cake pan
Icing
100g icing sugar, sifted
1 pkt (250g) cream cheese, softened
2 tablespoons lemon juice
Method:
Cake
Pre-heat oven to 180°C/160°C (fan forced). Grease and line a 20cm round cake pan with baking paper
Place cake mix, eggs, milk, margarine or butter and spices into a mixing bowl. Using an electric mixer beat on low for 30 seconds to combine
Increase speed of mixer to medium and beat for 2 minutes. Pour into prepared pan
Bake for 40-45 mins or until the cake springs back when touched lightly in the centre. Allow to cool for 5 mins before turning out of the tin
Icing
Place all ingredients into a mixing bowl
Using an electric mixer, beat on a low speed to combine all ingredients. Increase speed to medium and beat for 2 minutes until smooth
Spread icing on top of cooled cake
