Dough
- For best results use the KitchenAid Platinum ExactSlice Food Processor
- Attach the work bowl (large bowl) to the processor with the multi purpose blade
- Add the flour, yeast, sugar, salt and cover. Select speed 1 and process for 15 seconds or until well combined. Pour in the oil and water through the small food chute and process for 10 seconds or until a dough is beginning to form
- Change to the dough blade and re-cover. Select speed 1 and process for 2-3 minutes or until a soft dough forms. Using lightly floured hands remove the dough and form into a ball. Place in a lightly oiled bowl, cover with a clean tea towel. Set aside in a warm place until dough doubles in size
Tomato Sauce
- Reattach the large bowl to the processor with the drive adaptor, place in the small bowl and mini blade. Place all the sauce ingredients into the mini bowl. Cover and process on speed 2 for 5 seconds or to the desired consistency.
Toppings
- Meanwhile, to prepare the cheese and toppings, wipe out the work bowl with a soft cloth and place on the processor with the drive adapter. Attach the disc adaptor to the slicing disc with the 'medium' shredding side and place it onto the processor bowl. Cover and remove the middle food chute. Place a piece of cheese into the chute, select speed 1 and gently push the cheese down with the pusher, but don't force it! Repeat with the remaining mozzarella and then the parmesan cheese. Remove the cheeses from the bowl and set aside. Wipe out the bowl with a soft cloth
- Replace the bowl onto the processor with the drive adaptor. Attach the slicing adaptor to the slicing disc and place it into the processor bowl. Cover and remove the middle food chute. Select speed 2 and place zucchinis into the chute, gently pushing it down with the pusher as required, repeat with the tomato, capsicum and onion (see tips). Remove vegetables from the bowl and set aside.
- Divide the dough in half and roll out forming 2 pizza bases. Spoon over the fresh tomato sauce, scatter over a little cheese, top with a selection of vegetables and scatter over remaining cheese. Bake in a very hot oven (250°C) or covered BBQ for 12 minutes or until cooked, crisp and golden. Scatter over fresh basil and serve.
Tips & Hints:
- Bread/strong flour is available from supermarkets and specialty stores. The quickest shredding & slicing method is to leave the motor running and drop the vegetables into the small chute
- You may need to trim the vegetables to fit or select small sizes that will fit easily! If larger sizes are desired then use the large chute. This is also very quick to use, but does involve re-selecting the speed after the large chute is removed each time
- When slicing or grating, the pusher should have just enough pressure to keep the food in contact with the blade, this vegetarian recipe may contain dairy products and eggs and are therefore suitable for lacto-ovo-vegetarians only, who have adopted a vegetarian diet for health reasons
