Method:
Warm Kipfler, Caramelised Onion and Blue Cheese Salad
  1. Place the potatoes and rosemary on a paper lined baking tray and spray with oil. Bake in a moderate oven 180°C for 35 minutes or until tender
  2. Meanwhile, heat oil in a frypan and saute onions over medium heat until softened, tender and golden in colour, approximately 10 minutes. Add sugar and cook for a further 5 minutes
  3. Place cooked potatoes on a serving platter and top with caramelised onions. Drizzle with dressing then crumble over the blue cheese. Garnish with rosemary. Serve immediately
Tips & Hints:
  • Use your favourite roasting potato for this recipe if desired. Cook onion ahead of time and warm in a microwave oven before serving over potatoes.
