Watermelon, Strawberry and Feta Salad

Ingredients:

2 tablespoons olive oil
1 tablespoon white wine vinegar
Salt and pepper, to taste
500g peeled watermelon (approx. 1kg piece), cut into 2cm cubes
250g punnet strawberries, hulled and halved
¼ cup mint leaves, torn
100g feta cheese
2 tablespoons pistachio kernels, roasted and roughly chopped

Method:

Shake oil, vinegar and seasonings in a screw topped jar to make a dressing
Place watermelon, strawberries and mint in a serving platter or bowl and pour over the dressing
Sprinkle with mint leaves, feta and pistachios. Serve chilled

Tips & Hints:

For an additional middle eastern flair, add the seeds of 1/2 pomegranate with the feta and pistachios.
