Easy zucchini and bacon slice recipe that's a great way to eat more vegetables. Zucchini Slice will keep in the fridge for 2-3 days and can also be frozen.

Ingredients:
Method:
  1. Preheat the oven to 180°C. Grease a non-stick lamington tin and set aside
  2. Melt the butter in a medium fry pan over a medium heat. Once melted, add the onion and bacon, and cook for 4-5 minutes or until the onion softens and the bacon starts to turn golden. Transfer from the pan into a medium bowl to cool
  3. Place the zucchini, cheese, flour, and eggs in a large bowl. Add the cooled onion and bacon mixture, season well with salt and pepper, and stir to combine all ingredients
  4. Pour the mixture into the prepared tin, transfer into the oven, and cook for 30 minutes or until puffed and golden. Remove from the oven and allow to cool for 5 minutes
  5. Cut the slice into squares and serve warm or at room temperature
Tips & Hints:
  • This is a yummy lunch or afternoon treat which kids love. A great way to get some extra greens in their diet!
