How to store pavlova

Pavlovas and meringues in general can be tricky when it comes to storing them. They are easily affected by humidity and moisture, so you want to keep them as dry as possible until the last moment. It's best to cook your pavlova as close to when you want to eat it as possible. If kept very carefully, they can last up to two days.
 
To store pavlova and avoid it turning soft, follow these steps:
 
  1. Make your pavlova on a dry (not humid) day. Allow pavlova to cool in the oven with the door ajar until completely cooled.
  2. Place in an airtight container and seal tightly. Do not store with other baked goods or decorations.
  3. Store in the pantry or other cool, dark place. Do not store in the fridge.
  4. Store for up to 2 days maximum.
 
Decorate your pavlova just before serving. It will hold for 20-30 minutes before softening and losing some of its crisp texture.
