Going Green Mocktail
Ingredients:
Lakanto Classic Simple Syrup

Method:
Lakanto Classic Simple Syrup
- Blend the monkfruit sweetener in a blender for about 30 seconds until it resembles icing powder.
- In a small saucepan, combine sweetener, cornflour and water over low heat. Stir gently until the sweetener and cornflour dissolves. Keep the heat low and don’t let the mixture boil.
- Chill the simple syrup in the fridge until ready to use. You will have enough for 3-4 drinks.
Mocktail
- Muddle ginger, cucumber and lime in a bowl or jug. If you don’t have a muddler, you can use the back end of a wooden spoon or similar.
- Clap mint together in your hands until the scent is released, then add to the mixture. Press the mint gently with the muddler a few times.
- Using a small strainer, strain the mixture into a glass. Press down on the mixture so all juices are released.
- Add simple syrup (made earlier) to the mixture and stir.
- Add ice and top with soda water. Adjust sweetness by adding more simple syrup if you wish. Stir, garnish and serve.
Tips & Hints:
- WE HAVE REPLACED THE TRADITIONAL SUGAR INGREDIENT WITH LAKANTO, SO THIS RECIPE NOW HAS 95% LESS SUGAR.
