For a light and very tasty salad, this roasted beetroot, radish and pear salad recipe is a must try. With red wine vinegar and crumbled feta this flavoursome dish is an absolute treat.

Roasted Beetroot, Radish and Pear Salad
Ingredients:
Method:
  1. Preheat oven to 200°C
  2. Place the beetroot, 1 tablespoon oil, salt and pepper on a baking tray and toss to combine
  3. Roast for 25-30 minutes or until tender
  4. Place in a bowl with the radish, pear, cress and feta and toss to combine
  5. Place the vinegar, remaining oil, garlic, salt and pepper in a bowl and whisk to combine
  6. Drizzle over the salad to serve
