Weet-Bix Pancakes with Berries and Yoghurt
Ingredients:
Method:
  1. In a medium-sized mixing bowl, combine Weet-Bix, sifted flour, cinnamon and bi-carb soda. Set aside
  2. In a separate bowl, whisk eggs then add vanilla, soy milk and melted margarine. Stir to combine
  3. Pour the dry mix into the wet, and mix until pancake batter is well combined
  4. Heat a non-stick fry pan over medium heat. Place 1/4 cup of the mix into the pan and cook until bubbles appear. Flip and cook for approximately 30 seconds on the second side
  5. Remove and keep warm. Cook remaining pancakes, repeating process. Serve with maple syrup and berries
