A creamy chicken pasta bake recipe with spinach and parmesan crumbs. This chicken casserole with crunchy breadcrumb topping is an easy chicken dinner idea, full of flavour and you can you either leftover chicken, or a BBQ chicken to make it easier.

Chicken and Spinach Pasta Bake with Parmesan Crumbs
Ingredients:
Béchamel sauce
Parmesan crumb
Chicken Pasta bake
Method:
Béchamel sauce
  1. For the béchamel, melt butter in a saucepan over medium heat. Add the flour, whisking until combined. Stir the milk in 2 batches and continue to stir until the sauce becomes thick and coats the back of a wooden spoon. Cover surface with plastic wrap and set aside
Parmesan crumb
  1. Combine panko crumbs, grated Parmesan cheese and oil in a medium bowl. Use your hands to mix. Set aside
Chicken Pasta bake
  1. Preheat oven 220°C/200°C (fan forced). Grease a 2 litre (8 cup capacity) ovenproof dish
  2. Cook pasta in a large saucepan according to packet instructions, drain and refresh under cold water
  3. Place spinach and chicken in a large mixing bowl. Add cooked pasta and Perfect Bakes cheese and mix well
  4. Stir béchamel through the pasta mix and spoon into prepared ovenproof dish
  5. Scatter Parmesan crumb mix over the pasta and bake for 15 minutes or until golden brown. Serve warm with a fresh salad
Tips & Hints:
  • This is a great recipe to use up leftover roast chicken, or a store bought chicken.
  • Chicken pasta bake can be frozen on the step before cooking.

I made this before reading the reviews. It's a good recipe. As for the complaints below geeze people it's basic cooking isn't it to taste as you go? Maybe the seasoning was limited to make it better for kids? I just added some to the sauce. Pretty easy really. Anyway, my family liked it.

I am so dissapointed with how the recipe turned out. It didn't call for any spices so I didn't add any, which resulted in a very bland taste. I followed everything in the recipe as written, questioned the 4 cups of milk, but, hey, thats what it called for and it took forever for the mix to thicken. You should either change/update this recipe and give it another go. Once perfected, I may try it again. Out of 10, this reciped gets a 2.....

This is a very poor recipe! The amount of milk specified for the bechamel is double what the roux will actually thicken. Also there is no seasoning in the sauce. Also it was not good including a packet of bought cheese mix. The point of cooking is to make it yourself! Worst of all, this was not a suitable recipe for children to cook as it was supposed to be. There were no children- centred directions nor any warnings about when they would need help for safety reasons.
